Cakers Who've Made Sandcastle Cakes....any Tips/ Tricks?

I've recently been asked to make a sandcastle wedding cake for a couple renewing their vows.

Any lessons learned on making it look like a sandcastle? Buttercream? Fondant? How did you do it?

Do the bride and groom want fondant or buttercream? Do they want a more formal-looking cake with turrets and towers, or a relaxed look?
In the very casual sand castle in my pictures, I used buttercream tinted tan (with Wilton Winnie the Pooh coloring, which is no longer made), and sprinkled with crushed graham crackers mixed with gold or yellow sugar for sparkle.
