Would I Use Gum Paste Or Modeling Chocolate For This?

I'm just getting into the cake business.I'm in the process of making my brother a birthday cake with a "Fishermen" theme.I was wanting to mold a canoe for the center piece of the cake.I've worked with Fondant and Gum Paste,but never Modeling Chocolate.I know the fondant may be a little to heavy.Do you think i should go with Gum Past or Modeling Chocolate for this?

I don't think the modeling chocolate will be any lighter... But it will give you a nice brown for the canoe!
