How Do I Store Mmf Cake W/ Custard Filling?

I am making a white cake with a custard filling. I am going to cover it in Marshamallow fondant. I am bringing it to my job tomorrow morning, so I would like to cover and decorate it tonight. It's not going to have too many decorations. I am making a house cake. My question is - How should I store it overnight? Can I leave it out w/ the custard filling? I know that you are not supposed to refrigerate fondant covered cakes. I have put one in the refrigerator, but only for an hour before I left to deliver the cake and it was fine.

You shouldn't have any problems refrigerating. I have done this several times with no ill effects. If it is humid though, I would recommend that you sit it out in front of a fan while it comes to room temperature. Enjoy your cake!

I completely agree with syllymel13! I've done it many a time... it might sweat a bit after taking it out of the refrigerator but that will disappear. Good luck!
