Hi everyone i'm looking for a recipe for a pecan pie cupcake... I looked and just can't find one... Anybody have one???

This recipe is quick and easy:

Pecan Pie Cupcakes

Prep Time: 15 mins; Total Time: 33 mins

1 cup chopped pecans*
1/2 cup all-purpose flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

*I toast mine first (325º for approx. 8 min.)

1. Preheat oven to 350º.
2. Combine all ingredients and mix well.
3. Spray a miniature muffin tin with non-stick cooking spray.
4. Fill each 3/4 full.
5. Bake in preheated oven for approx. 16 18 minutes.

What kind of frosting would be best keeping it like a pecan pie....????

The website I foud this at (food.com) did not have a frosting on these. I don't know if you would need one but maybe a powdered sugar glaze if you wanted???

how about a boiled icing made with brown sugar that might go nicely

I might have to give those a try. They sound yummy.
