Urgent!!! How Do I Keep My Fondant Dry

I am making a wedding cake this weekend and i live in NM which is ordinarially dry but we have swamp coolers for air conditioning and it makes the house humid. how can i get my fondant to stay dry. i have refrigerated fondant before and it was a gooey mess within about 15 min in the open air HELP

Usually, Any sweating that occurs on fondant will dry off after a couple of hours, As long as you dont touch the fondant, It should be ok.
