Yes you can. I freeze all of my cakes ahead of time.

Yes, you certainly can. I make and freeze Italian cream cake frequently (my recipe is posted here in the recipes section if you're interested).

When freezing your cake, do you freeze it iced or w/out icing?  I've just had someone ask if you could freeze one, and I honestly do not know the answer!

You can freeze any cake.  I typically always froze just the torted cake layers, but, yes it is possible to freeze an entire iced cake.
