I have someone who requested a red velvet cake with cream cheese frosting. I have seen recipes for cream cheese buttercream but am still so confused about the refrigeration part. I am planning on covering it in fondant and I would rather not refrigerate my cake after the fondant is on it but I would also not like anyone to get sick from my cake! Any advice on what to do would be greatly appreciated!

There is a decorators buttercream icing recipe in the Recipes section. I would use this and then cover in rolled fondant. You should be ok for a couple days without refrigeration.

My cream cheese version of Indydebi's bc doesn't require refrigeration.
