Can I use high ratio shortening in place of the crisco? Does the amount change or do I still use the same amount called for in the recipe?

Yes you can. I've used it before at the bakery where I worked. (I don't have hi ratio at home) The first time that I made it I used the same amount as the recipe calls for the next time instead of using 1 1/3 cup I only used 1 cup. In my opinion it was better with the lesser amount. Since hi ratio can absorb more sugar and liquid than regular shortening it makes sense. I think someone on here had suggested reducing the amount of shortening when using hi ratio...so I tried it and in my opinion it was better.

Honestly it will work either way you choose to do it. thumbs_up.gif
