Make the brim from either gumpaste or 50/50 gumpaste/fondant mix. Prop the sides up with anything, a box, books etc. It's important to make it enough in advance to give it time to completely dry. I have a picture of one I did in my pictures.

I made one with fondant/gp mix (1 to 3 ratio) so it would harden faster (bad time-management on my part). To get the right shape, I purchased a hat from a party store, flipped it over, covered it with plastic wrap and placed the piece of fondant/gp (rolled to about 1/4 inch) on top. This also let me trim the edges to the right size.

Let it sit for a day and then flipped it over onto foam to continue drying. Super easy.
