We used cocoa powder to break my nephew of bitting when he was younger. Worked like a charm.

When it comes to chocolate icing I add until I get the color or taste I want.

If you are using chocolate, you want to just melt it and little it cool a little so you aren't dumping hot chocolate into the icing. I've added melted chocolate both to the fat liquid as well as after the icing was made, and didn't really notice much of a difference in either way.

I was thinking the same this as Indydebi, cocoa shouldn't be sweet. If you use semisweet chocolate it will be sweeter than cocoa because it already has sugar added, r you positive you used cocoa?
