Time Line And Baking Questions

I have four cakes due Saturday. I have already started to make the gumpaste/fondant elements, however I wanted to start baking the cakes and freezing them tonight. Would that be ok? Also when should I defrost them, try to do them on on Friday or defrost and cover them (with fondant on Thursday) All the parties are for satruday and sunday so what would work best? It takes me 3 or so hours to cover and decorate.

Second part question, most of my cakes are going to be two tiered. 12" on bottom and 8"do i need any support? and can I get away with one layer on bottom and two layers on top? or shoud I do two layers on bottom and two on top?? I saw one picture were someone used the towel around the cake for even baking and lined the cake pan around with parchement paper and the cake rose like crazy will that work for the bottom?
