Hi! I am making a cake this weekend and I want to make a double batch of BC so the mixer doesn't cause air bubbles. I won't have another cake to do till the week after. Can I store the extra in the fridge? It does have butter in it so I am fearing it will harden.
Any tips are much appreciated!!!!

Yes, store it in the fridge and bring back to room temp to rebeat when you need it. It lasts for months in the fridge or you can freeze it.

I make several double batches of Indydebi's bc each week so that I always have icing. I store in an airtight container on the counter. I know that it will hold at room temperature for 2 weeks or better.
