Mmf Fondant,in The Fridge?

how far in advance can i leave my mmf covered cake in the fridge, they changed the date on me. I'm going out of town. is it going to be OK in the fridge for 5 days?. icon_cry.gif

If you have already made the cake then there's not much you can do. The fridge will dry the cake out and freshness wouldn't be guarenteed. Unfortuantely you can't leave it out on the counter either. I have had one occassion where I had to freeze a finished cake and it was "ok" when it thawed out. It tasted great but some of the fondant sagged while it was thawing. Not sure I have an answer for you...just going off my own experience.

The Mickey Mouse cake turned out great, the mm fondant did not crack after a week in the fridge . Cake was moist & delicious. Thanks for your input. icon_biggrin.gif
