My son was in a wedding in Ocala, FL two weekends ago. He is getting married next March. He said the cake had an icing on it that was softer than fondant but firmer than buttercream and had a marshamallow taste to it. He said it was wonderful. Does anyone have a recipe that might match that description? I am a hobby baker but am going to make their wedding cake and would love to try out this icing and possibly use it on their cake.

Rolled buttercream possibly?

My guess would be marshmallow fondant. It can stay pretty soft if you don't add all the powdered sugar. It can make it hard to work with though! Ask me how I know! icon_smile.gif
