Is There A Secret To Sharp Corners????

I just finished crumbcoating a 9x9x2 square. I baked the cake using my new Magic Line pan and I was so happy with my perfectly square edges. And then I crumbcoated it and just destroyed those beautiful edges!!! I was using a bench scraper for the first time and every time I tried to go around the corner, the cake started pulling off!!!

The cake was semi-frozen! I have patched it up mostly ok. I won't be doing the final icing and decorating until later this evening.

Is there a particular technique that I can use with the bench scraper to achieve and/or preserve the sharp edges? Should I be stopping at each corner when I turn my turntable???

I do plan on investing on some DVDs to better learn this, but for now just need to finish this cake. It's for my daughters birthday party tomorrow!

Don't go "around" the corners. Pull the icing from the corner to the middle of each side.
