Hola y bienvenida. Me pregunto si no será que no le estas poniendo suficiente manteca cuando la amasas o suficiente líquido (sabores, agua, gliceria o glucosa). Postea la receta a ver si puedo ayudarte mejor.
Puedes tratar esta receta que es mezclando chocolate con el fondant de wilton:
