does anyone have a knockout recipe for a rasberry mouse requested for rehearsal dinner cake? I would appreciate it. Also what type of frosting (white) would you use? I find the butter/crisco powder sugar a bit sweet? thanks and appreciate any suggestions.

I've never made a mousse for a filling, just the raspberry puree. There's a similar recipe on this site, but I've used this one in the past.

As for the icing. If you're finding the shorting/powdered sugar icings too sweet, you could use a Swiss Meringue or Italian Meringue buttercream. Because they use sugar instead of powdered sugar, they are less sweet and they use butter instead of shortening. I like the swiss meringue myself, and I found it took a lot of flavouring especially if you find it really buttery. The one I like is on this site.

So appreciate it...I have a rasberry buttercream I use all the time which is similar to the italian meringue...but it does not put out a lot as a frosting. Not the same as a mousse but wonderful on a cake...just needs to be refrigerated due to 1 lb of butter and then it gets firm. Dont like as a filling for that reason.
