I want to cover my cake in fondant now but it is still partly frozen - can I cover or do I need to wait until it is fully defrosted....

From everything I've read, wait until it defrosts completely.

Wait till its defrosted... the process of unfreezing will cause it to sweat under the fondant, and it will get yucky. Good luck!

You asolutely need to let it warm up before you cover it. If you lived where I do these days, it wouldn't take very long! It's hot here.
