The other day I saw a new recipe posted in the recipe section named "Firm carrot cake for carving and layering" you might want to check that. There is an amazing carrot cake recipe on recipezaar also. Huge ratings, but I am not sure if it is good for carving or not. If you make either, please let me know how was the results. Thanks...

I actually use

1 box Carrot Cake mix
4 eggs
1/3 cup oil
1 cup water
1/3 cup all purpose flour

That will make 1-8" double layer or 1- 1/4 sheet
