I have been to ask to make a topsy turvy wedding cake for a friend. Just wondering what the best cake size pans to use. It will serve 150 people. The bride is ok with 3 or 4 layers. I like the 4 layer look. Not sure if I should use pans in 2" increments or 3" increments? Any advice yould be helpful. Thanks.

The topsy turvy cake in my pics is 2" intervals (it was my first one, so it's a little messy) but it will give you an idea of the difference in the tiers. I didn't have a problem carving or stacking it, but it didn't leave a lot of room for 3D decorations.
