I am making a couple of cakes for our department birthdays at work, and I was told that there are some that like the whipped cream icing. They used to get their cakes from kroger, and I personally don't care for that kind. But I was wondering if there was a good recipe for a whipped cream icing rather than just whipping some cream and adding sugar and vanilla. Plus, I live in houston and I'm afraid that it would melt too much.
Also, I've seen some recipes that call for bettercreme. When I looked into that online I saw in a forum that Sam's sells it. I called and they said that they sell it in a 15 pound container and that once it's opened it's only good for 14 days. Unopened it can be frozen....is that right? They do sell their whipped icing and buttercream in 5 pound buckets, but again it has to be refigerated and I don't have room for a 5 pound bucket. Not too bad of a price, and I want to try the recipes. Anyone know?
