I'm doing my first fondant wedding cake for this Friday. I want to complete the cake on wed. night and refrigerate it until Friday. Would that be ok, or should I plan on completing it on Thursday night and not refrigerate it. I noticed that the decorators on tv always put them in the refrigerator. I just don't want to mess it up. Help

The problem isn't the refrigerating. It is the condensation and possible color bleeding when you bring it back to room temp. It can be done, just don't touch the fondant while it's wet (leaves prints). When I have no other choice but to store in the fridge, I place the cake in front of an immaculately clean fan and turn the cake every 20-30 minutes until the cake is back to room temp.
