I have a 3-tier due Saturday and I want to bake, fill, crumbcoat tomorrow, and then ice and decorate Saturday. The thing is, I always use a whipped cream based filling (either vanilla whipped cream filling or whipped ganache).

I'm assuming that nothing bad will happen to the cake and filling overnight in the fridge? The filling won't change consistency or anything, right? I plan to keep my crumbcoated cake as airtight as possible in the fridge to prevent moisture loss.

Whipped cream filling needs to be refrigerated. I'm not sure about whipped ganache.

I just did a whipped cream filled cake, filled it the day before and left it tightly wrapped in the fridge overnight before decorating the next day and it was fine. I was a little nervous before cutting into it, but it help up very nicely. I am not sure about whipped ganache, but I assume it would be the same. Good luck!
