Hi,
I am planning to frost a birthday cake the previous day with swiss meringue. The cake would be basic yellow cake.
- After the frosting, do i keep the cake outside or in the fridge?
-And does it have to be covered? I never covered a cake with basic buttercream frosting and it was perfect after refridgerating it, without any crusting.

Awaitng your responses !! Thanks!

Keep it in the fridge overnight, but make sure to take it out at least an hour or two before you're going to eat it....depending on how large the cake is. (i.e. the larger/stacked cakes need to come to room temp for a few hours before eating, or the icing is hard/cold like butter straight from the fridge. The smaller cakes/cupcakes, only need about 1/2hr to an hour to temper.)
