Here's what I use for doctored Red Velvet

1 Box DH Red Velvet cake mix
1 cup all purpose flour
1 cup sugar
3 tablespoons cocoa powder
1 box instant white chocolate pudding mix
1 cup sour cream
1/2 cup half and half or milk
1/2 cup strong coffee (cold)
3 eggs
1 tablespoon pure vanilla extract

Sift cake mix together with dry ingredients. Combine all other ingredients in mixing bowl add half the sifted dry ingredients, mix until blended, add remaining dry ingredients and beat for 2 minutes.
Bake at 325 until done.

I just made this for a cake I had due today, and it tasted great. My only difference was- all milk, no coffee,no cocoa powder and I use chocolate pudding instead of white choc. Your recipe sounds Awesome!!!
