I have used a raspberry mousse filling from cake central and really love it but I'm wondering, can fresh raspberries be added to a mousse recipe? Would that taste weird? I'm struggling with this one for some reason and need some help as I have a cake this weekend where they want a choc cake with a raspberry filling but they don't really care what type of raspberry filling. Should I just stick with the mousse or put fresh raspberries in the mousse as well. Help!
I see no reason why you can't fold raspberries into the mousse before you spread it. It sounds yummy. If the raspberries are too large you can always break them in half or quarters before you fold them in. I often do this with raspberries if I am adding them to a baked item.
If you don't feel comfortable doing that, you can place the flattened raspberries on top of the cake before you put down the mousse, or you could place flattened raspberries on top of the mousse after you spread it.
I saw an episode of Cake.Boss where he did this.
