I did a dog cake a few months ago. I did the entire head out of rice krispy treats and carved it. Then iced it and covered with fondant.

The whole body was cake (it was huge! A newfoundland!). I baked several sheet cakes and then just stacked and carved. I did it in a sitting position, as I figured that would be easiest.

For texture on the "fur," I lightly stabbed it with a fondant tool that had several tines, like a fork.

It was quite an undertaking, and I was rushed so it didn't turn out as well as I had hoped, but the birthday boy was happy!

Good luck!

Go on youtube and type in 'how to make a dog cake' unbelieveable. 4 days in four minutes. Elisa Strauss of Confetti Cakes is amazing. There are lots of others to look at also.
