I have a BUNCH of root beer flavored buttercream leftover and I hate to throw it out. I have an order where I'll need to use it in about a month and a half. Okay to freeze it? Does freezing change the texture?

freezing is a great way for preserving and storing buttercream. when you need it, let it thaw to room-temp and then re-whip it. i like to store mine in freezer bags so i can label them with what they are and the date. when i need it, it's easy to thaw and then i just cut a slit in the bag and squeeze the contents into my mixer. hopefully your recipe will be fine.

Can be frozen for up to six months.
