For those looking for dairy free cake and dairy free icing recipes I have found that I can use my regular recipe and substitute soy milk/soy creamer for any of the milk the recipe calls for, and use Earth Balance Natural Butter Spread (I use the original flavor) for any butter in the recipe. It changes the texture of the cake just slightly, but makes a great tasting cake that is dairy free. It doesn't change the crust or structure of the cake at all. I use Sugarshacks icing recipe all the time for dairy free cakes and substitute the soy milk for the coffee creamer liquid and it works just fine. Doesn't change the texture at all, and still stays creamy without air bubbles as long as you follow her instructions.

When I have dairy free and nut free cakes/icings, I keep a written list of all ingredients in the recipes, including fondant, gumtex, and gumpaste and review it with the customer so that I know there is nothing there that I am not seeing that could cause a problem.
