Does anyone have any go to recipes to make funfetti style cupcakes from scratch? Also any tips? I am thinking about just using a vanilla cupcake recipe and mixing in the sprinkles in by hand right before baking.

I use 1/4 cup of jimmies per batch, that's about double what's in the box.
I like being able to customize the colors.

What an excellent way to use up all those sprinkles I have from last Christmas so I can get new stuff for next Christmas. I'm going to have to do this!

I do the same thing...I love making the inside of the cake match the outside for kids birthdays...red and blue sprinkles in a spiderman cake, for ex. Fun and easy!

I made the cupcakes using the Joy of Baking vanilla cupcake recipe and I put about 1/4c sprinkles in them and WHOA are they yummy! next time I think I will add 1/3c of sprinkles for even more of a funfetti effect.
