Many people like to use a thinner icing to write with. You definitely don't want it too stiff or it starts to break off mid-letter.

What are you trying to use? What is the recipe you are working from?

I usually add just a little bit of corn syrup to thin my buttercream. Using a small parchment bag with the tip taped in helps me be able to hold it almost like a pencil and is easier for me than using a pastry bag with coupler. Hope that helps some.
