How Far In Advance Do You Bake Your Cake?

So I have my first big cake to do this weekend. I want to take my time so that I get all the details done correctly.

This is going to be a big one tier cake (maybe 1/2 sheet big) and I don't have a pan that big, so I was thinking of doing 4 8x9..does that sound right?

If the party is this Saturday and I want to cover with ganache and fondant, how far in advance would you bake your cakes and how do you store them in the meantime?

Sorry for so many questions. I just want to make sure I don't ruin anything.

me too! I am going to bake on thursday, decorate friday, to deliver saturday morning. good luck to us both!
