Gelatin-Free Paste, Does It Exist?

Hi everyone:

I have a request from a vegetarian who DOES NOT want anything on the cake that contains gelatin... Now we already talked about the cake and the icing.... but there is a request some specific decorations and wants to know if we can make it with something that is GELATIN FREE...

Does anyone know of ANY sugar paste or subsitute that can be used?
Maybe pastillage?
maybe a thick RI?
Modeling Chocolate?


any suggestions will be appreciated...

I have used agar as a substitute for gelatin. It works pretty good. You can get it at a health food store for sure.

I forgot to say I think that agar is some how made from seaweed. So it is vegetarian and kosher!

have u used it to make gumpaste / fondant ?

agar, agar is a vegan form of natural gelatin (made of red algae) and can be substituted anywhere you would use gelatin (bone marrow).
It works fine.
It is used in a lot of products that you might not be aware of.
You can get it at any Whole Foods (formerly Wild Oats) stores and your local health food store. You will not find it in the organic section of your grocery store unfortunately. My local Kroger is very limited when it comes to that.

I only make the MMF but I have used it to make mousse and my daughter has made other stuff with it. And I have not braved the gumpaste yet. I am sorry It was not expensive and lasts a long time. If I remember right it is the same amount of agar as gelatin. I guess that isn't much help.

no no... that IS a lot of help... thanks for the info... I had no idea that gelatin was bone marrow OR that there was a substitute... thanks to both of you!!!

I know a lot of people don't like it but both Wilton fondant and gumpaste are gelatin free.

I flavor the Wilton fondant when I have to use it and that iimproves it.
