Royal Icing Problem For The First Time Ever!!!

I have taught classes for many years and tonight I ran into a problem with royal icing. I have always taught in large air conditioned stores but now I am in a small space. I also need to add that I am living in a different climate, I've come from the Canadian prairies and now am on the west coast with the ocean in view, also, it is raining right now.

When we started class tonight a couple of students had royal icing that seemed a bit too stiff but I told them to try a bit and see how it works. It was fine but by the end of the class all of the icing, including mine, was getting very thin to the point that there was no way we could do a rose and all the other flowers were sagging and flat.

I'm convinced it's the humidity but as I am new to these weather conditions I need feed-back from any of you who also have these conditions. Is there a "fix" for the icing?
