Margarita Cupcakes
1 package lemon cake mix
1 (4 ounce) package instant lemon pudding mix
½ cup vegetable oil
¾ cup frozen margarita mix (thawed)
4 large eggs, lightly beaten
½ cup gold tequila
2 tbs triple sec
2 tbs lime zest
Preheat oven to 350 degrees
Combine cake mix, pudding mix, vegetable oil,
Margarita mix, water, eggs, tequila and triple sec in a large
mixing bowl.
Beat for 2 minutes at medium speed with an electric
mixer.
Divide among cupcake pans
Bake for 15-20 minutes or until inserted toothpick in
the center comes out clean.
Lime Cream Cheese Icing
· 1-8oz box of cream cheese
· 1 lb of powdered sugar
· ½ cup of vegetable shortening (Crisco)
· ½ cup of butter softened
· 1 tsp vanilla extract
· 2 tbs lime juice
· 2 tbs tequila
· 2 tbs lime zest
Mix room temperature cream cheese with shortening, butter, vanilla, lime juice and tequila. Mix until smooth. Add powdered sugar continue mixing until smooth. Add more tequila or lime juice until you reach the desired consistency.
