I have to make a wedding cake for a bride who is very diabetic. Does anyone have a recipe for low-sugar/no sugar buttercream and cake?

Its not buttercream, but you could use whip whipping cream and sugar free pudding together for the icing. But the cake.....I have no idea!

Is she set on a cake.....cupcakes are huge right now...maybe you could mimic the cupcakes thinh by doing sugar free mousse in sugar free chocolate cups? Do them up on a tiered display stand?
I really haven't found a good sugar free cake recipe I like and I have been looking (my bro is diabetic).

I have had good luck with using Splenda in cakes. I usually replace most of the sugar with Splenda. As far as the buttercream goes, I have no idea.

If you do the cupcake thing, her cupcake could have whipped cream with splenda on the top instead of frosting. I make that whipped cream with Splenda all the time, and it's great.
