That's what I was thinking - chocolate buttercream or whipped ganache - but was also told vanilla buttercream - just not sure how good that would be.

those sound great. I also love Mocha Buttercream (coffee chocolate). Fabulous on pretty much anything chocolate or right out of the bowl.

Ganache sounds good and so does vanilla.

I made a choc cake yesterday with dulce de luche filling and frosting, OMG.. it is sooo good!

Any of the above! Although to hedge my bets, I often ice with vanilla IMBC, in case people just can't handle the richness of that much chocolate.

My pick would be 7 minute icing, It is glossy, very white, and a very good counterpoint to all that chocolate.

Sounds yummy! You pretty much can't go wrong here! I like mocha or Kahlua but a nice vanilla buttercream would be good too or even some sort of cream cheese, I'm a big cream cheese fan so a cream cheese or even sour cream frosting would blend together too. Sounds so good! Just enough time to make all the cakes I want to try out icon_sad.gif

They all sound good! I have never had or made a 7 minute frosting...what's it like ?

Here are 2 recipes, basically the same taste, just different ways of getting there...but both are fantastic!

White Mountain Icing

Ingredients
3 cups white sugar
1 cup water
1/4 teaspoon cream of tartar
3 egg whites
1 pinch salt
1 teaspoon vanilla extract
Directions
1.Combine sugar, water, and cream of tartar in a saucepan. Cook until candy thermometer reaches 238 degrees F (115 degrees C), or until syrup spins a long thread when dripped from a spoon.
2.Beat egg whites until stiff. Pour a thin, slow stream of the syrup into egg whites, beating constantly until frosting stands in peaks. Stir in salt and vanilla to taste.


7 Minute Icing

Ingredients
2 egg whites
1 1/2 cups white sugar
1/3 cup cold water
1 1/2 teaspoons light corn syrup
1 teaspoon vanilla extract
Directions
1.Put egg whites, sugar, water and syrup in top of double boiler. Beat until mixed well. Place over rapidly boiling water. Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised. Remove from heat. Add vanilla. Beat. Fills and frosts 2 layer cake, 8 or 9 inch.
