I am making a strawberry shortcake for a client (vanilla sponge cake with strawberries and real whipped cream). She wants the cake decorated with gumpaste accents for a communion. Normally, I would ice the cake in plain stabilized whipped cream but whipping cream and gumpaste don't like each other in my experience. She doesn't want fondant covering the cake, any suggetions? I would really appreciate any insight.
