Help! Cupcake Baking In Convection Oven....

I'm renting kitchen space from a caterer who has a convection oven. So tonight I went to make several dozens of cupcakes and had the worst experience!! My cupcakes baked through properly and tasted good, but it appears the fan in the oven blows the tops of the cupcakes over. I've read in a previous post to place full sheet pan in the oven to lessen the direct air flow, so I tried this but nothing seemed to work.
Does anyone have any experience with this, or any suggestions to offer? I baked at 325 and they baked through great, all except for the blown wave like tops.
I'm selling at a Farmers' Market next weekend, so I need help quick!!
