I got a French buttercream recipe to do a friend a cake for them and the recipe is as follows:

10 egg whites
15 ounces of sugar
2 and 1/2 pounds of unsalted butter

What kind of sugar are they using.... granular or confectionary? I never made French Buttercream, only the Wilton with all butter.

Thank you in advance.
