I have a bride that is requesting a strawberry mousse filling for her cake. Her wedding is in July. All my recipes have dairy products and I am afriad to use that with the heat. Does anyone have a strawberry mousse filling that will be okay in the heat. The reception will be indoors but I am still a bit concerned with a mousse filling. Thanks for any suggestions.

Google can be your best friend sometimes. Search non-dairy mousse recipes. Then start testing to find one that works. If it impossible to find one up to your standards, just educate your BTB on food borne pathogens. I have also seen some sleeve fillings that look like strawberry something or other....
