Hi all,

I am working on a 2 tier cake tonight (10, 6) and I was going to do 3 layers in the 10" tier but decided to go with 2.
I had frozen the cakes and took them out tonight to defrost as I started working.

Can I put the layer I am deciding NOT to use back in the freezer? It has defrosted but has not been unwrapped. Will it be OK when I go to use it or will freezing, defrosting, and re-freezing make it not so good?

Thanks for your input!

Ally

I would go ahead and refreeze it and enjoy it later!

It can change the texture a little, but will still be yummy.

Thanks for the replies.
I decided to make cake balls and freeze them for use at another time. I snuck and ate one last night and it was fine.
Thanks again!
