I need to use whip cream but wont be able to because these cupcakes will be outside...Any recipes for something light and creamy that doesn't require a fridge???

Maybe try "Rich's Bettercreme" You might be able to find it at a wholesale foods store(not costco, not sure if Sam's carries it) Maybe try the Wilton whipped frosting, they sell it at Michaels and even Walmart I think.

Pastry Pride is another non dairy whipped icing.....pretty good We also have a Flavor Right in my area, it's pretty good too.....I'm in the SF area....
