Trying To Make A Cake With Cookie Dough Inside

I had the cupcakes with cookie dough inside them and they were great. I'm trying to figure out how to translate that to a double layer sheet cake with crumbled cookies in the middle.

All the recipes for the cupcakes emphasize not overbaking the cupcakes or the dough will be dry. But my sheet cakes usually take 40+ minutes to bake. So I'm not sure what to do.

I can't do it as cupcakes because we're building Andy's room from Toy Story, with the walls and all, so it needs to be a sheet.

Has anyone done this? Have suggestions? His birthday party is next weekend and I'm freaking out. I really would like it to be this cake if possible. Help please!

I have made cookie dough w/out an egg & it still tastes like dough. But it's not a cookie, it's dough. But Oooohhhh so good!
