I always meant to ask this question to my pastry teachers but they'd have us so busy i'd forget. anyhoo,if i put liqueur in ganache is it safe for kids to eat? does the alcohol just evaporate an leave flavor or..what?
it's not a lot of liqueur to add, but personally, I don't add it if I know kids will be eating it.
It tastes great without it anyway, so why run the risk of giving someone something they shouldn't be eating (for whatever reason)?
