I am making a coconut cake with shredded coconut in the cake. Does anyone know if I can sub lite coconut milk for the milk. It has more fat than my 2% milk (16 g per 8 0z.), less sugar (4g), and less sodium (0g). What do you think?
I was wondering this too...while we wait for a pro to answer..here's what I found!

not an expert but I did this for my brothers birthday cake. I used the WASC recipe and used canned coconut milk. It worked fine for me. Made a great coconut lime cake!
Not sure I consider myself a "Pro" but as a Pastry Chef I say "Yes" you can :0) & it's wonderful ... try it in your brownie recipes too!!
:0) At our home we say that's a $16,000 answer :0)
