I have many times. I would let the buttercream crust very well and make sure the ganache is cool. do you want to completely cover the cake or just let it drip down the sides?

after pouring ganache on top, the cake then has to be refrigerated, right?

Thanks all! Yes, I am just letting it drip over the sides. I have a bride who wants white buttercream with chocolate ganache covereing the tops of all three layers running down the sides and and decorated with red roses. Sounds great doesnt it?
