Wow... suddenly I wish I was a legal baker! I live about 10 miles from you. Anyway, I know it's a bit of a distance, but I've seen a cake place in downtown Belleville. Try doing a google search for "cake edwardsville IL". I found several places on the map that aren't "store bought". Sadly, I'm sorta new here, so I don't know who is good.
