I use lemon curd mixed with sifted icing sugar, tastes lovely ![]()
3/4 cup sugar
2 tbsp cornstarch
dash salt
3/4 cup water
3 tbsp lemon juice
2 slightly beaten egg yolks
I tsp lemon zest
1 tbsp butter
In saucepan combine sugar, cornstarch salt. Gradually add juice. Stir in egg yolks and zest. Cook over med heat until thickened and bubbly. Boil 1 minute and remove from heat. Stir in butter. Cool to room temp without stirring.
I use this for my DD b-day last week and there was no cake left!
