everyone who gave me suggestions. I had found a picture of 3 square cakes offset and had no idea what to do. I think it turned out nicely. This was the biggest cake I ever did and probably the most formal.
Thanks again to those who helped with all the suggestions!!!

Bottom layer is white chocolate cake, white chocolate mousse filling, middle layer is vanilla cake with lemon mousse filling and top is french vanilla cake and filling. All covered in vanilla/almondish BC.

I just use the Marida's mousse recipe I got off Sugarcraft's website. It's 2 c. heavy whipping cream with a box of instant pudding (the 4 serving size). I had never used this before and now I LOVE it, I'm going to use it often! It was SO easy and so many different flavor options. I liked it too because it wasn't as sweet as other things, just really light.
Also, as far as how far in advance I made this, that was my MAJOR stress!! We are in the process of buying a house so yesterday was stressful. I baked all the cakes Friday night and woke up early to decorate. The bottom tier I covered in BC and then put in the fridge for a while to help crust the icing. The diamond impression mat was so easy. Then we had to go sign the contract on our house and I get pressed for time. I WILL NEVER DO THAT AGAIN!! I thought I had plenty of time, the only problem is that in Texas heat and humidity, the other tiers would not crust and I didn't have time to put them in the fridge. So the mat was much harder to work with. I managed though! I love the look of the diamond impression and would like to do this on an upcoming cake for my grandmother. I now know what to do!
Thanks for all the great comments. I LOVE this cake, it's my favorite now!
